Recipe Review: Chicken Parmesan Casserole

I haven’t done a recipe review in a while, so I thought I’d bring you guys one today! I tried out this recipe for Chicken Parmesan Casserole from Thriving Home!

Mind you, this recipe did not come from my own culinary mind – all of that credit belongs to Polly and Rachel – but, if you have been following my recipe reviews, you know I am not always the best at following recipes exactly. I had to switch it up and up my own twist on it!

I’m a big fan of chicken parm and I’m always looking out for a cheap and simple casserole to have for dinner, so this recipe was right up my alley! The recipe does not require many ingredients, is easy to put together, and is so cheap! I love it!

When I started making the recipe, I actually did follow the instructions – I cooked the chicken,ha!

The recipe on the website just said to cook it, but I wanted to experiment! Instead of boiling the chicken, I sauteed it with bell pepper, apple, buttermilk, and a number of spices(I forgot what I put in there, so I won’t list them off, ha). I’m not sure what I did, but that chicken smelled DIVINE when it was fully cooked!

After that, I kind of did my own thing.

After that, I boiled some Merletti pasta! The recipe does not call for pasta, but I was still experimenting and wanted to stretch the casserole out as much as possible! I love how cute this pasta is, and it really soaked up the marinara sauce!

After that, all I did was mix the pasta, marinara sauce, and chicken together in a casserole dish. I then topped it off with bread crumbs and cheese(I used a mixture of Parmesan, mozzarella, and a bunch of other cheeses). I did follow their directions and bake it for 20-25 minutes though :).

And here you have it – the beautiful end result! Doesn’t it look great?! Well I can assure you that it tasted just as good as it looked!
